For the Herb-Roasted Turkey Breast:

  • 34 lbs bone-in turkey breast, skin-on
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 lemon, sliced
  • 1 onion, quartered
  • 1 cup chicken broth

For the Cranberry Reduction Sauce:

  • 1 cup fresh cranberries
  • ¾ cup sugar
  • 1 tablespoon lemon juice
  • 1 cup water
  • 1 teaspoon balsamic vinegar

Instructions

1️⃣ Preheat the oven:
Preheat your oven to 375°F (190°C).

2️⃣ Prepare the turkey:
In a small bowl, combine olive oil, garlic, rosemary, thyme, salt, and pepper. Rub the mixture all over the turkey breast, ensuring it’s well coated. Place the lemon slices and onion quarters inside the cavity and around the turkey on the roasting pan. Add the chicken broth to the bottom of the pan.

3️⃣ Roast the turkey:
Transfer the turkey breast to the oven and roast for 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Baste the turkey every 30 minutes with the pan juices to keep it moist.

4️⃣ Make the cranberry reduction sauce:
While the turkey roasts, combine cranberries, sugar, lemon juice, and water in a small saucepan over medium heat. Cook for 10-15 minutes, stirring occasionally, until the cranberries burst and the sauce thickens. Stir in balsamic vinegar, cook for another 5 minutes, then remove from heat.

5️⃣ Rest and serve:
Once the turkey has reached the proper temperature, remove it from the oven and let it rest for 10-15 minutes before carving. Serve slices of the turkey with a generous drizzle of cranberry reduction sauce.
