For the Pavlova:

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • ¼ teaspoon salt

For the Topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh fruit (pomegranate seeds, raspberries, blueberries, citrus slices)
  • Fresh mint leaves (for garnish)

Instructions

1️⃣ Preheat the oven:
Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper and draw a circle about 8 inches in diameter as a guide for the wreath shape.

2️⃣ Prepare the meringue:
In a large, clean bowl, whisk the egg whites on medium speed until soft peaks form. Gradually add the sugar, a tablespoon at a time, while continuing to whisk on high speed until the meringue is glossy and stiff peaks form. Gently fold in the vanilla, cornstarch, vinegar, and salt.

3️⃣ Shape the wreath:
Spoon the meringue onto the parchment paper within the circle guide, shaping it into a wreath with a well in the center. Create a slight indentation around the edges to give the wreath its shape.

4️⃣ Bake the pavlova:
Bake the meringue in the preheated oven for 1 ½ hours, or until the outside is crisp and the inside is soft and marshmallow-like. Turn off the oven and let the pavlova cool completely inside with the door slightly ajar.

5️⃣ Whip the cream:
While the pavlova cools, whip the heavy cream, powdered sugar, and vanilla extract together until soft peaks form.

6️⃣ Assemble the wreath:
Once the pavlova is completely cool, gently transfer it to a serving platter. Spread the whipped cream in the center and around the edges, then top with fresh fruit like pomegranate seeds, raspberries, blueberries, and citrus slices. Garnish with mint leaves.

7️⃣ Serve:
Serve immediately and enjoy the crunchy, sweet meringue with the creamy topping and fresh fruit!
