Ingredients

Scale
  • For the Cherry Layer:
    • 3 cups powdered sugar
    • ½ cup unsalted butter (softened)
    • 2 tbsp heavy cream
    • 1 tsp vanilla extract
    • 1 tsp almond extract
    • ½ cup maraschino cherries (drained and finely chopped)
    • 4 drops red food coloring (optional)
  • For the Chocolate-Peanut Topping:
    • 2 cups semi-sweet chocolate chips
    • 1 cup creamy peanut butter
    • 1 cup chopped salted peanuts

Instructions

  • Prepare the Cherry Layer:
In a large bowl, beat together powdered sugar, butter, heavy cream, vanilla, and almond extract until smooth. Fold in the chopped maraschino cherries and food coloring, if using.
  • Set the Base Layer:
Spread the cherry mixture evenly into a greased or parchment-lined 9×13-inch pan. Chill in the refrigerator for 1–2 hours, or until firm.
  • Make the Topping:
In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring between each, until smooth and fully melted. Stir in the chopped peanuts.
  • Top the Cherry Layer:
Pour the chocolate-peanut mixture over the chilled cherry layer, spreading it evenly with a spatula.
  • Chill and Set:
Return the pan to the refrigerator for at least 2 hours, or until the bars are completely firm.
  • Cut and Serve:
Use a sharp knife to cut the bars into squares or rectangles. Serve chilled or at room temperature.

Notes

  • For a nut-free version, substitute the peanuts with crushed pretzels or omit them entirely.
  • Store bars in an airtight container in the refrigerator for up to 1 week.
  • Use dark chocolate chips for a richer flavor.
