Homemade Cinnamon Coffee Cake Recipe

Cinnamon Coffee Cake is a moist, buttery cake layered with a ribbon of cinnamon-sugar streusel and topped with a crumbly topping. Perfectly paired with a morning cup of coffee or served as a dessert, this classic treat is easy to make and full of warm, comforting flavors.

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream or plain Greek yogurt

For the Streusel Filling and Topping:

  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan or line it with parchment paper.
  • Make the Streusel:
    • In a medium bowl, combine the brown sugar, granulated sugar, cinnamon, and flour. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in nuts, if using. Set aside.
  • Prepare the Dry Ingredients:
    • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Cream Butter and Sugar:
    • In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3 minutes.
  • Add Eggs and Vanilla:
    • Beat in the eggs one at a time, then add the vanilla extract.
  • Combine Wet and Dry Ingredients:
    • Gradually mix in the dry ingredients, alternating with the sour cream. Start and end with the dry ingredients, mixing until just combined.
  • Assemble the Cake:
    • Pour half the batter into the prepared pan and spread evenly. Sprinkle half of the streusel mixture over the batter.
    • Top with the remaining batter and spread it evenly. Sprinkle the rest of the streusel mixture over the top.
  • Bake the Cake:
    • Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve:
    • Allow the cake to cool in the pan for 15 minutes before slicing. Serve warm or at room temperature.

Notes

  • Use Greek yogurt as a substitute for sour cream for a lighter texture.
  • For a glaze, mix 1/2 cup powdered sugar with 1–2 tablespoons of milk and drizzle over the cooled cake.
  • This cake freezes well; wrap tightly and store for up to 3 months.
