  • pounds boneless, skinless chicken thighs
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 3 tablespoons honey
  • 2 tablespoons Sriracha sauce (adjust for heat preference)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • Sliced green onions and sesame seeds (optional, for garnish)

Instructions

1️⃣ Prep the chicken:
Pat the chicken thighs dry and season both sides with salt and pepper. Lightly coat each piece with cornstarch.

2️⃣ Sear the chicken:
Heat vegetable oil in a large skillet over medium-high heat. Add the chicken thighs and cook for 4–5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

3️⃣ Make the sauce:
In the same skillet, reduce the heat to medium. Add the minced garlic and grated ginger, cooking until fragrant (about 1 minute). Stir in the honey, Sriracha, soy sauce, and rice vinegar. Simmer for 2–3 minutes until the sauce thickens slightly.

4️⃣ Coat the chicken:
Return the chicken thighs to the skillet, tossing them in the sauce until well coated and heated through.

5️⃣ Serve:
Garnish with sliced green onions and sesame seeds, if desired. Serve immediately over steamed rice or noodles.

Notes

  • For a milder version, reduce the amount of Sriracha and add an extra tablespoon of honey.
  • Substitute chicken breasts if preferred, adjusting cooking time as needed.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
