For the Chocolate Shell:

  • 6 oz dark chocolate (finely chopped)

For the Raspberry Compote:

  • 1 cup fresh raspberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice

For the Chocolate Mousse:

  • 8 oz dark chocolate (finely chopped)
  • 1 cup heavy cream (chilled)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

1️⃣ Make the chocolate shell: Melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method) or in the microwave in 30-second intervals. Stir until smooth.

2️⃣ Prepare the molds: Using a silicone dome mold, spoon a small amount of melted chocolate into each cavity and use the back of a spoon to spread the chocolate up the sides, forming an even shell. Chill the mold in the refrigerator for 10–15 minutes until set.

3️⃣ Prepare the raspberry compote: In a small saucepan, combine the raspberries, sugar, and lemon juice. Cook over medium heat, stirring frequently, until the raspberries break down and the mixture thickens (about 10 minutes). Let cool completely.

4️⃣ Make the chocolate mousse: Melt the 8 oz of dark chocolate in a double boiler or microwave. In a separate bowl, whip the heavy cream with powdered sugar, vanilla extract, and salt until soft peaks form. Gently fold the melted chocolate into the whipped cream until well combined.

5️⃣ Assemble the mousse domes: Once the chocolate shells have set, carefully remove them from the molds. Fill each shell with a spoonful of raspberry compote, followed by a generous amount of chocolate mousse.

6️⃣ Chill and serve: Refrigerate the assembled mousse domes for at least 1–2 hours until firm. Serve chilled and enjoy the luxurious flavors!

Notes

  • If you don’t have a silicone dome mold, you can use any other mold or simply form the mousse into small individual servings.
  • For extra richness, you can top each dome with a dollop of whipped cream or more raspberries before serving.
  • These domes can be made ahead of time and stored in the refrigerator for up to 3 days.
