  • 1 lb large fresh shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • Juice of 1 lemon
  • 1 cup long-grain white rice
  • 2 cups water
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse shrimp under cold water and pat dry. Set aside.
  2. In a medium pot, bring 2 cups of water to a boil. Add rice and a pinch of salt, reduce heat, cover, and simmer for 18-20 minutes.
  3. In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add shrimp to the skillet, season with salt and pepper, and cook for 3-4 minutes until pink and opaque.
  5. Squeeze lemon juice over the shrimp, mixing gently.
