Ingredients

Scale

For the Crust:

  • 2 store-bought refrigerated pie crusts (or homemade)

For the Filling:

  • 1 cup light corn syrup
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 2 cups chopped pecans
  • 1 cup pecan halves (for topping)

For the Topping:

  • 2 cups hot water
  • 1/2 cup brown sugar

Instructions

  • Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • Roll out one pie crust and press it into the bottom of a greased 9×13-inch baking dish.
  • Make the Filling:
    • In a large mixing bowl, whisk together corn syrup, brown sugar, granulated sugar, melted butter, eggs, vanilla extract, and salt until smooth.
    • Stir in the chopped pecans.
  • Layer the Cobbler:
    • Pour half of the pecan filling over the pie crust in the baking dish.
    • Roll out the second pie crust and place it over the filling, trimming any excess dough.
    • Pour the remaining filling over the second layer of crust.
  • Add Topping:
    • Sprinkle the pecan halves over the top layer.
    • In a small bowl, mix hot water and brown sugar until dissolved. Pour this mixture evenly over the entire cobbler.
  • Bake the Cobbler:
    • Bake for 55–60 minutes, or until the filling is bubbly and the crust is golden brown.
    • Allow the cobbler to cool for at least 30 minutes before serving.
  • Serve:
    • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

  • Storage: Store leftovers in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
  • Make-Ahead Tip: The cobbler can be prepared a day in advance. Reheat in the oven at 300°F (150°C) until warm before serving.
  • Nut Alternatives: For a twist, substitute pecans with walnuts or a mix of both.
