  • 1 lb Italian sausage (mild or spicy, depending on preference)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) white beans or cannellini beans, drained and rinsed
  • 4 cups chicken broth (or vegetable broth for a lighter version)
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp red pepper flakes (optional, for heat)
  • Salt and black pepper, to taste
  • 1 cup spinach or kale, chopped (optional)
  • 1/2 cup small pasta (like ditalini, orzo, or elbow macaroni)
  • Fresh Parmesan cheese, for garnish

Instructions

  • Brown the Sausage:
    • Heat the olive oil in a large pot or Dutch oven over medium heat.
    • Remove the casing from the Italian sausage (if using links) and crumble it into the pot.
    • Cook, breaking the sausage apart with a spoon, until browned and cooked through (about 5–7 minutes). Drain any excess fat if necessary.
  • Cook the Vegetables:
    • Add the diced onion, garlic, carrots, and celery to the pot. Cook for about 5 minutes, or until the vegetables begin to soften.
  • Add Tomatoes and Broth:
    • Stir in the diced tomatoes (with their juice) and chicken broth.
    • Add the oregano, basil, red pepper flakes, salt, and black pepper. Stir to combine.
  • Simmer:
    • Bring the soup to a boil, then reduce the heat to low and simmer for 15–20 minutes, allowing the flavors to meld together.
  • Add Pasta and Greens:
    • Add the pasta and chopped spinach or kale (if using). Continue to simmer for another 10–12 minutes, or until the pasta is tender.
  • Serve:
    • Taste and adjust seasoning as necessary. Ladle the soup into bowls and garnish with freshly grated Parmesan cheese. Serve hot.

Notes

  • For a heartier soup, add extra beans or vegetables like zucchini or potatoes.
  • You can use turkey sausage as a leaner alternative to pork sausage.
  • If the soup thickens too much, add a bit more broth or water to reach your desired consistency.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or in the microwave.
