Leftover Turkey Pot Pie

  • 2 cups cooked turkey, shredded or diced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 1 cup celery, diced
  • 3 garlic cloves, minced
  • 1 teaspoon thyme (dried or fresh)
  • ½ teaspoon rosemary (dried or fresh)
  • ¼ cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese (optional)
  • Salt and pepper, to taste
  • 1 package (2 crusts) refrigerated pie crusts
  • 1 egg (for egg wash, optional)

Instructions

1️⃣ Preheat the oven:
Preheat your oven to 375°F (190°C).

2️⃣ Cook the vegetables:
In a large skillet, heat olive oil over medium heat. Add the onion, carrots, peas, and celery. Cook for 5–7 minutes until the vegetables are softened. Add the garlic, thyme, and rosemary, and cook for an additional 1–2 minutes.

3️⃣ Make the filling:
Sprinkle the flour over the vegetables and stir to combine. Cook for 1 minute to remove the raw flour taste. Slowly pour in the chicken broth while stirring, followed by the heavy cream. Simmer for 3–5 minutes until the mixture thickens. Add the turkey and cheddar cheese (if using), and stir until the cheese is melted and the turkey is warmed through. Season with salt and pepper to taste.

4️⃣ Assemble the pot pie:
Roll out one pie crust and fit it into the bottom of a 9-inch pie dish. Pour the turkey mixture into the pie crust. Roll out the second pie crust and place it over the top. Trim any excess crust and pinch the edges together to seal. Cut a few slits in the top crust to allow steam to escape. If desired, brush the top crust with a beaten egg for a golden finish.

5️⃣ Bake the pot pie:
Place the pot pie in the oven and bake for 35–40 minutes, or until the crust is golden brown. Let it cool for 5–10 minutes before slicing and serving.

Notes

  • Use store-bought or homemade pie crusts depending on your preference.
  • Feel free to add more veggies like corn, mushrooms, or green beans to the filling.
  • Leftover pot pie can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat in the oven for best results.
