    • 1 ½ cups graham cracker crumbs
    • ¼ cup granulated sugar
    • ½ cup unsalted butter, melted
  • For the Cheesecake Filling:
    • 2 (8 oz) packages cream cheese, softened
    • ½ cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
    • ½ cup sour cream
    • 1 tbsp all-purpose flour
  • For the Crème Brûlée Topping:
    • ¼ cup granulated sugar (for caramelizing)

Instructions

1️⃣ Prepare the Crust: Preheat your oven to 325°F (163°C). Line a 12-cup muffin tin with cupcake liners. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of each muffin cup. Bake for 10 minutes, then set aside to cool.
2️⃣ Make the Cheesecake Filling: Beat the cream cheese and sugar together until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, and flour until fully incorporated.
3️⃣ Assemble and Bake: Spoon the cheesecake filling over the cooled crusts, dividing it evenly among the muffin cups. Smooth the tops. Bake for 20–25 minutes, or until the edges are set and the centers are slightly jiggly. Let cool in the pan for 10 minutes, then transfer to the fridge and chill for at least 4 hours, or overnight.
4️⃣ Prepare the Crème Brûlée Topping: Once the cheesecakes have chilled, sprinkle a thin, even layer of granulated sugar on top of each cheesecake. Using a kitchen torch, caramelize the sugar by moving the flame over the surface until it turns golden brown and crispy.
5️⃣ Serve: Allow the caramelized topping to cool slightly before serving. These mini cheesecakes are now ready to be enjoyed with their delightful crème brûlée finish!

Notes

  • If you don’t have a kitchen torch, you can place the cheesecakes under a broiler for a few seconds to achieve the caramelized topping.
  • For an extra twist, add a splash of vanilla extract or almond extract to the filling for added flavor.
