Ingredients

Scale

For the Cake:

  • 1 cup unsalted butter, melted
  • 1/2 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup chopped pecans or walnuts (optional)
  • 1 1/2 cups mini marshmallows

For the Chocolate Frosting:

  • 1/2 cup unsalted butter
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup milk (whole or 2%)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

Make the Cake:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. Combine Wet Ingredients:
    • In a large mixing bowl, whisk together the melted butter, cocoa powder, and sugar until smooth.
    • Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Add Dry Ingredients:
    • Gradually fold in the flour and salt until just combined. If using, stir in the chopped nuts.
  4. Bake the Cake:
    • Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  5. Add Marshmallows:
    • Remove the cake from the oven and immediately sprinkle the mini marshmallows evenly over the top. Return to the oven for 2-3 minutes, just until the marshmallows are puffed but not browned.

Make the Frosting:

  1. Melt the Butter:
    • In a medium saucepan, melt the butter over medium heat. Stir in the cocoa powder and milk until smooth.
  2. Add Powdered Sugar:
    • Remove from heat and whisk in the powdered sugar and vanilla until smooth and glossy.

Assemble the Cake:

  1. Frost the Cake:
    • While the marshmallows are still warm, pour the chocolate frosting evenly over the cake. Use a spatula to spread it, covering the marshmallows completely.
  2. Cool and Serve:
    • Let the cake cool completely at room temperature before slicing.

Notes

  • For an extra crunchy texture, sprinkle additional nuts or chocolate chips on top of the frosting.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • This cake can be made a day ahead—it tastes even better as the flavors meld!
