For the Cake:

  • 4 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder

For the Filling:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 8 Oreos, crushed
  • 4 Ferrero Rocher chocolates, finely chopped

For Decoration:

  • 1 cup whipped cream or chocolate ganache
  • M&Ms, as desired
  • Additional Ferrero Rocher chocolates, for garnish
  • Crushed Oreos, for topping

Instructions

  • Prepare the Cake:
    • Preheat the oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease.
    • In a large mixing bowl, beat the eggs and sugar on high speed until thick and pale, about 5 minutes. Add vanilla extract and mix well.
    • Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined.
    • Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes, or until the cake springs back when lightly touched.
  • Roll the Cake:
    • While the cake is still hot, turn it out onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper and roll the cake tightly with the towel. Let it cool completely.
  • Prepare the Filling:
    • Whip the heavy cream and powdered sugar together until stiff peaks form. Gently fold in the crushed Oreos and chopped Ferrero Rocher chocolates.
  • Assemble the Roll Cake:
    • Unroll the cooled cake and spread the filling evenly over the surface. Carefully re-roll the cake without the towel and place it seam-side down on a serving plate.
  • Decorate the Cake:
    • Spread whipped cream or chocolate ganache over the entire roll cake. Decorate with M&Ms, Ferrero Rocher chocolates, and crushed Oreos as desired.
  • Chill and Serve:
    • Chill the roll cake in the refrigerator for at least 1 hour to set. Slice and serve.

Notes

  • For extra indulgence, drizzle melted chocolate over the roll cake before adding decorations.
  • Use mini M&Ms for easier slicing and a colorful presentation.
  • The cake can be made a day in advance and stored in the refrigerator until ready to serve.
