Ingredients

Scale

For the Mocha Chocolate Cake:

  • 2 cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot brewed espresso or strong coffee

For the Whipped Coffee Frosting:

  • 1 cup heavy whipping cream
  • 2 tablespoons instant coffee granules
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract

Instructions

1️⃣ Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper.

2️⃣ Prepare the cake batter: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed until smooth.

3️⃣ Add the coffee: Slowly pour in the hot espresso or coffee while mixing on low speed. The batter will be thin—this is normal!

4️⃣ Bake the cakes: Divide the batter evenly between the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

5️⃣ Make the whipped coffee frosting: In a chilled mixing bowl, combine the heavy whipping cream, instant coffee granules, sugar, and vanilla extract. Beat with an electric mixer on high speed until stiff peaks form.

6️⃣ Assemble the cake: Place one cake layer on a serving plate and spread a generous layer of whipped coffee frosting on top. Place the second cake layer over the frosting, then frost the top and sides of the cake.

7️⃣ Decorate and serve: Garnish with chocolate shavings, coffee beans, or a dusting of cocoa powder for an elegant finish. Slice and enjoy your Mocha Chocolate Cake with Whipped Coffee Frosting!

Notes

  • For a stronger coffee flavor, increase the instant coffee granules in the frosting.
  • This cake stores well in the refrigerator for up to 3 days in an airtight container.
  • Add a layer of ganache between the cake layers for an extra chocolatey touch.
