Ingredients

Scale
  • 1 (3 oz) box orange gelatin (such as Jell-O)
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 (8 oz) tub whipped topping (such as Cool Whip)
  • 1/2 cup sour cream
  • 1/2 cup mini marshmallows
  • 1/2 cup mandarin oranges, drained (optional, for extra fruit)
  • 1 tsp vanilla extract

Instructions

  • Prepare the Gelatin:
    1. In a medium bowl, dissolve the orange gelatin in 1 cup of boiling water, stirring until completely dissolved.
    2. Add 1/2 cup of cold water and stir to combine.
    3. Place the bowl in the fridge and allow the gelatin to set for about 1-2 hours, or until firm.
  • Prepare the Creamy Mixture:
    1. In a separate bowl, whisk together the sour cream and vanilla extract until smooth.
    2. Gently fold in the whipped topping until well combined.
    3. Add the mini marshmallows and mandarin oranges (if using), and stir gently to incorporate.
  • Combine the Gelatin and Cream Mixtures:
    1. Once the gelatin has set, use a spoon or fork to break it into small chunks.
    2. Gently fold the creamy mixture into the gelatin, mixing until evenly combined.
  • Chill and Serve:
    1. Transfer the mixture to a serving bowl or individual cups.
    2. Chill in the fridge for at least 2 hours, or until the salad is firm and well chilled.
    3. Garnish with extra mandarin oranges, marshmallows, or a sprinkle of grated orange zest for extra flair.

Notes

  • For added texture and flavor, consider adding a small handful of shredded coconut or chopped nuts.
  • You can substitute plain Greek yogurt for sour cream for a slightly tangier version.
  • If you prefer a firmer texture, let the gelatin set for an extra 30 minutes before combining with the cream mixture.
  • For a more vibrant color, add a few drops of orange food coloring before chilling.
  • This salad is great for make-ahead, as it can be stored in the fridge for up to 3 days.
