Instructions

1️⃣ Prepare the Cake:

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla.
  4. Gradually add the dry ingredients, alternating with coconut milk. Stir in the crushed pineapple.
  5. Divide the batter between the pans and bake for 25–30 minutes. Cool completely.

3️⃣ Whip the Coconut Frosting:

  1. Beat heavy cream and powdered sugar until stiff peaks form.
  2. Gently fold in coconut extract and shredded coconut.
