Ingredients

Scale

For the Tomatoes:

  • 4 large, ripe tomatoes (beefsteak or heirloom work well)
  • Salt and black pepper (to season the tomatoes)

For the Shrimp Salad:

  • 1 pound cooked shrimp, peeled, deveined, and chopped
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 teaspoon Old Bay seasoning (or a pinch of paprika)
  • 2 tablespoons fresh dill or parsley, chopped
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Tomatoes:
    • Slice the tops off the tomatoes and use a spoon to scoop out the insides, creating a hollow shell. Sprinkle the inside lightly with salt and pepper, then turn them upside down on a paper towel to drain excess moisture while preparing the salad.
  2. Make the Shrimp Salad:
    • In a large bowl, combine the chopped shrimp, celery, red onion, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, and fresh herbs. Mix well and season with salt and pepper to taste.
  3. Stuff the Tomatoes:
    • Pat the hollowed-out tomatoes dry and fill each one generously with the shrimp salad mixture.
  4. Serve:
    • Arrange the stuffed tomatoes on a serving platter. Garnish with extra herbs or a sprinkle of paprika if desired. Serve chilled.

Notes

  • Make-Ahead Option: You can prepare the shrimp salad up to 24 hours in advance. Store in the fridge and stuff the tomatoes just before serving.
  • Tomato Alternatives: If large tomatoes are unavailable, cherry or Roma tomatoes can be used for bite-sized versions.
  • Dietary Adjustments: Use light mayonnaise or yogurt for a healthier version.
  • Add-ins: Enhance the shrimp salad with avocado, cucumber, or diced bell peppers for added flavor and texture.
