Instructions

  1. Cook the Sausage:
    • In a large pot or Dutch oven, heat olive oil over medium heat.
    • Remove the sausage from its casing (if necessary) and crumble it into the pot. Brown the sausage, breaking it apart with a spoon, until fully cooked, about 5-7 minutes.
  2. Add the Vegetables:
    • Add the chopped onion and garlic to the pot with the sausage. Cook for another 3-4 minutes, stirring occasionally, until the onion becomes soft and translucent.
    • Stir in the carrots, potatoes, zucchini, and green beans, and cook for another 2-3 minutes.
  3. Add the Broth and Tomatoes:
    • Pour in the diced tomatoes (with their juices) and chicken broth.
    • Stir in the oregano, basil, salt, and pepper. Bring the soup to a simmer, and cook for about 20-25 minutes, until the vegetables are tender.
  4. Taste and Adjust Seasoning:
    • Taste the soup and adjust the seasoning, adding more salt or pepper if necessary.
  5. Serve:
    • Ladle the soup into bowls and garnish with fresh parsley or basil if desired. Serve hot and enjoy!
