Ingredients

  • 1 lb (450g) Italian sausage (mild or spicy), casing removed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh kale, chopped and stems removed
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup heavy cream (or half-and-half)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Red pepper flakes (optional, for heat)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  • Cook the Pasta:
    • Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  • Cook the Sausage:
    • While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Remove the sausage from the skillet and set aside.
  • Sauté the Onion and Garlic:
    • In the same skillet, add the chopped onion and cook for 3-4 minutes, until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  • Add the Kale:
    • Add the chopped kale to the skillet and cook for 2-3 minutes, stirring occasionally, until it wilts and becomes tender.
  • Make the Sauce:
    • Pour in the chicken or vegetable broth, stirring to combine. Let the mixture simmer for 2-3 minutes. Then, stir in the heavy cream, Parmesan cheese, salt, pepper, and red pepper flakes (if using). Allow the sauce to simmer for another 3-4 minutes, until it thickens slightly.
  • Combine the Pasta and Sausage:
    • Add the cooked pasta and sausage back into the skillet. Toss everything together to combine, adding the reserved pasta water if the sauce needs to be thinned out. Continue cooking for 1-2 minutes to heat everything through.
  • Serve:
    • Serve the Sausage Kale Pasta in bowls, garnished with fresh parsley and additional Parmesan cheese, if desired.

  • Make it Lighter: For a lighter version, substitute the heavy cream with half-and-half or a lighter cream alternative.
