Shrimp and Broccoli Pasta

Shrimp and Broccoli Pasta is a delicious, light, and nutritious dish that combines tender shrimp, fresh broccoli, and perfectly cooked pasta in a flavorful garlic and olive oil sauce. This quick and easy recipe is perfect for weeknight dinners or when you need a wholesome meal in under 30 minutes.

  • 8 oz pasta (spaghetti, linguine, or penne)
  • 1 lb large shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup chicken or vegetable broth (or reserved pasta water)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (plus more for garnish)
  • Salt and pepper to taste
  • Fresh parsley or basil, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  • Cook the pasta and broccoli:
    Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Add the broccoli florets to the boiling water during the last 2-3 minutes of pasta cooking. Drain the pasta and broccoli, reserving 1/2 cup of the pasta water.
  • Cook the shrimp:
    While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes per side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.
  • Make the sauce:
    In the same skillet, add the garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant. Add the chicken broth or reserved pasta water, and bring to a simmer.
  • Combine:
    Return the shrimp to the skillet, and toss with the cooked pasta and broccoli. Stir in the Parmesan cheese and mix until everything is well coated in the sauce. Add additional pasta water if needed to adjust the consistency.
  • Serve:
    Taste and adjust seasoning with salt and pepper. Serve warm, garnished with fresh parsley or basil, additional Parmesan cheese, and lemon wedges.

Notes

  • For a creamier version, add 1/4 cup of heavy cream or a splash of milk to the sauce.
  • Feel free to use frozen broccoli if fresh isn’t available. Just thaw and drain it before adding.
  • Add extra vegetables like cherry tomatoes or mushrooms for more variety.
