    • 2 cups all-purpose flour
    • ¾ cup boiling water
    • 1 tbsp vegetable oil
  • Dipping Sauce:
    • 3 tbsp soy sauce
    • 1 tbsp rice vinegar
    • 1 tsp sesame oil
    • ½ tsp chili oil (optional)

Instructions

  • Prepare the Filling:
    In a mixing bowl, combine chopped shrimp, Chinese chives, soy sauce, sesame oil, grated ginger, cornstarch, salt, and white pepper. Mix well until cohesive. Cover and refrigerate for 30 minutes.
  • Make Dumpling Wrappers (if not using store-bought):
    • Combine flour and boiling water in a large bowl, stirring until a dough forms.
    • Add vegetable oil and knead the dough on a floured surface for 8–10 minutes until smooth.
    • Cover with a damp cloth and let rest for 30 minutes.
  • Assemble the Dumplings:
    • Divide the dough into small balls (if making wrappers). Roll each ball into a thin circle, about 3 inches in diameter.
    • Place 1 teaspoon of filling in the center of each wrapper. Fold the wrapper in half and pleat the edges, pinching to seal.
  • Cook the Dumplings:
    • To Steam: Place dumplings in a parchment-lined steamer basket. Steam over boiling water for 8–10 minutes.
    • To Pan-Fry: Heat 1 tablespoon of oil in a skillet. Arrange dumplings flat-side down and cook until the bottoms are golden brown. Add ¼ cup water, cover, and steam for 5 minutes.
    • To Boil: Drop dumplings into boiling water and cook for 3–5 minutes or until they float.
  • Make the Dipping Sauce:
    Combine soy sauce, rice vinegar, sesame oil, and chili oil in a small bowl. Stir well.
  • Serve:
    Serve the dumplings hot with dipping sauce on the side.

Notes

  • Substitute Chinese chives with scallions if needed.
  • Dumplings can be frozen uncooked; steam or pan-fry directly from frozen.
  • For an extra kick, add minced garlic or red pepper flakes to the filling.
