For the Chicken and Rice:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 cup long-grain white rice (uncooked)
- 1 1/2 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese (optional, for serving)
- 2 tablespoons fresh parsley, chopped (for garnish)
Optional Add-Ins:
- 1 cup frozen peas or mixed vegetables
- 1/2 cup diced mushrooms
- Prepare the Slow Cooker:
- Lightly grease the inside of your slow cooker with cooking spray or a bit of oil.
- Assemble the Ingredients:
- In a medium bowl, whisk together the chicken broth, cream of chicken soup, thyme, paprika, salt, and pepper until smooth.
- Spread the uncooked rice evenly across the bottom of the slow cooker.
- Pour the soup mixture over the rice, then sprinkle the diced onion and minced garlic over the top.
- Add the Chicken:
- Place the chicken breasts on top of the rice mixture. Press them down slightly so they are partially submerged in the liquid.
- Cook the Dish:
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and fully cooked (internal temperature of 165°F/74°C).
- If adding vegetables, stir them in during the last 30 minutes of cooking.
- Finish and Serve:
- Once done, fluff the rice with a fork and shred the chicken if desired, mixing it into the rice.
- Sprinkle shredded cheese over the top (if using) and let it melt. Garnish with fresh parsley.
