Slow Cooker Chicken and Rice

Slow Cooker Chicken and Rice is a comforting and easy one-pot meal made with tender chicken, creamy rice, and flavorful seasonings. Perfect for busy weeknights, this dish is both hearty and satisfying, requiring minimal prep and leaving you with a delicious, home-cooked meal.

For the Chicken and Rice:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 cup long-grain white rice (uncooked)
  • 1 1/2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional, for serving)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Optional Add-Ins:

  • 1 cup frozen peas or mixed vegetables
  • 1/2 cup diced mushrooms

Instructions

  • Prepare the Slow Cooker:
    • Lightly grease the inside of your slow cooker with cooking spray or a bit of oil.
  • Assemble the Ingredients:
    • In a medium bowl, whisk together the chicken broth, cream of chicken soup, thyme, paprika, salt, and pepper until smooth.
    • Spread the uncooked rice evenly across the bottom of the slow cooker.
    • Pour the soup mixture over the rice, then sprinkle the diced onion and minced garlic over the top.
  • Add the Chicken:
    • Place the chicken breasts on top of the rice mixture. Press them down slightly so they are partially submerged in the liquid.
  • Cook the Dish:
    • Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and fully cooked (internal temperature of 165°F/74°C).
    • If adding vegetables, stir them in during the last 30 minutes of cooking.
  • Finish and Serve:
    • Once done, fluff the rice with a fork and shred the chicken if desired, mixing it into the rice.
    • Sprinkle shredded cheese over the top (if using) and let it melt. Garnish with fresh parsley.
  • Enjoy:
    • Serve hot and enjoy your Slow Cooker Chicken and Rice with a side salad or crusty bread.

Notes

  • For a creamier texture, you can stir in a splash of heavy cream or sour cream at the end.
  • To add more flavor, use seasoned chicken broth or add a splash of white wine to the liquid mixture.
  • Brown rice can be used instead of white rice, but it may require additional liquid and a longer cooking time.
