Strawberry Clafoutis

Indulge in the rustic charm of Strawberry Clafoutis, a classic French dessert that’s as easy to make as it is delightful. This dessert features juicy strawberries suspended in a rich, custard-like batter, baked to golden perfection. With its creamy texture and sweet fruity flavor, it’s perfect for brunches, tea-time treats, or an elegant dinner party dessert. Serve it warm, dusted with powdered sugar, or with a dollop of whipped cream for a truly irresistible experience.

Ingredients

Scale
  • 1 cup fresh strawberries (hulled and halved)
  • 3 large eggs
  • ½ cup granulated sugar
  • 1 cup whole milk
  • ½ cup all-purpose flour
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)
  • ¼ teaspoon salt
  • Butter, for greasing the dish
  • Powdered sugar, for dusting

Instructions

1️⃣ Prepare the oven: Preheat your oven to 350°F (175°C). Generously butter a 9-inch round baking dish or pie pan.

2️⃣ Arrange the strawberries: Spread the halved strawberries evenly across the bottom of the prepared dish.

3️⃣ Make the batter: In a mixing bowl, whisk together the eggs and sugar until pale and frothy. Add the milk, vanilla extract, almond extract (if using), and salt. Gradually sift in the flour, whisking until the batter is smooth and free of lumps.

4️⃣ Pour and bake: Pour the batter over the strawberries, ensuring they’re evenly distributed. Bake for 35–40 minutes, or until the clafoutis is puffed, golden, and set in the center.

5️⃣ Cool and serve: Let the clafoutis cool slightly before dusting with powdered sugar. Serve warm or at room temperature.

Notes

  • Swap strawberries for other fruits like cherries, blueberries, or peaches for variety.
  • For a richer flavor, substitute half of the milk with heavy cream.
  • The clafoutis will deflate slightly as it cools—this is perfectly normal!
